A quick and tasty recipe which makes you think of Italy!
Ingredients
4 large slices of bread with seeds
4 large tomatoes or 15 cherry tomatoes
olive oil
3 wires fresh basil
2 cloves garlic, crushed
salt and pepper
dried Italian herbs (thyme, rosemary, oregano, basil)
fresh grated Parmesan cheese
a few anchovy fillets
Instructions

For a quick and tasty recipe which makes you think of Italy I always choose bruschettas with all kinds of toppings. Today I choose the tomatoes to be the stars! 🙂

Cut the tomatoes into small pieces, sprinkle a little salt over them and leave in a bowl or in a sieve to drain.

In a bowl mix 4 or 5 tablespoons of olive oil with two cloves of crushed garlic and chopped fresh basil.

We cut the slices of bread in half and brush them on both sides with some olive oil mixed with dried basil. I like to fry them in a pan on medium heat. Heat the pan and cook the bread for 2 minutes on each side. Sprinkle a teaspoon of Italian herbs for extra flavor on the bread.

Mix the drained tomatoes with the olive oil, the garlic and the fresh basil and put this mixture on top of each slice of bread.

In the end grate some parmesan and put on each bruschetta an anchovy fillet.
