Strawberry and prosecco ice lollies

Weekend mornings always have a smell of scrambled eggs, at least for me. Every time I try different combinations, but most often I don’t make pictures because the weekend breakfast is served around 13:00 and I’m really hungry and then everything goes much faster.
For this recipe luckily I tooked some pictures so I will share this with you because is very easy to prepare it and is so tasty.
Heat a pan that can also be used in the oven. Add a tablespoon of butter and after it melts add the minced red onion. After a few minutes add the pancetta and let it until it begins to go brown and then put the green pepper.
Mix the eggs with the sliced olives, cheese, yellow cheese and chives. Season it with salt and freshly ground pepper. Pour the eggs over the pancettta and let them on heat for 2-3 minutes then put it in preheated oven at 160 degrees for 5-8 minutes until it is done and becomes fluffy.
You can put some freshly grated parmesan over it to give it even more flavor. It can be served with any cream cheese or simply with toast.
