150 g spreadable goat cheese
a handful of arugula
baby spinach leaves
2 slices of prosciutto crudo
salt and pepper
some fresh grated parmesan
A healthy and tasty recipe for a perfect breakfast!
First put in a saucepan water to boil and add a teaspoon of vinegar. When the water begins to boil, remove the saucepan from the heat and carefully put the two eggs in water. The easiest way to do this is to have the eggs broken into a small bowl.
The yolk should be soft, so after you put the eggs in the water, put the pan back on low heat and leave it about 3 minutes to be medium cooked. When ready, remove the eggs with a slotted spoon carefully so as not to break them.
Fry two slices of bread and brush with goat cheese. Over the cheese put a few leaves of arugula and baby spinach and the slices of prosciutto crudo. Finally add the eggs, season it with salt and freshly ground pepper and some parmesan.
