4 thick slices of bacon
1 Tbs olive oil
freshly ground pepper
4 egg yolks
200 g heavy cream
100 g cooking cream
100 g grated parmesan
zest of one lemon
1 tbs dried basil
If you are a fan of pasta, you will definitely love this recipe for pasta carbonara.
Cut the bacon into small cubes. Heat a pan, add olive oil and fry the bacon until golden.
Meanwhile, boil water with salt, add the pasta and cook as directed on package.
In a bowl beat the egg yolks, the cream, half the quantity of parmesan, the lemon zest, pepper and the basil. When pasta is ready mix immediately with the egg composition and the bacon.
The sauce should be creamy. If is not the desired texture you can also add a few tablespoons of the water in which the d pasta was cooked.
Sprinkle over with the remaining parmesan cheese and serve immediately!
