Strawberry and prosecco ice lollies

For this recipe, start with preparing the pesto sauce: put all the ingredients in a food processor and mix until you obtain a smooth paste. At the end, season with salt and pepper, but be careful with the salt because the anchovies are very salty.
Brush all bread slices with the pesto sauce obtained. Add on the slice of bread the smoked cheese, crumbled goat cheese, a few leaves of fresh spinach and then smoked cheese again and then top it with second slice of bread. Press together gently.
You can brush a little butter on top of the second slice of bread to catch a golden crust on the grill.
Preheat electric grill and cook for 4-5 minutes, enough time for the flavors to blend and the bread becomes golden brown.
We have served them with a simple salad of many “green leaves” topped it with some freshly grated parmesan!
