A wonderful meaty fish with a subtle flavour, perfect for dinner!
Ingredients
1 tuna loin - 800 g
a handful of fresh basil
1 dried chilli
1 clove of garlic
sesame seeds
juice from one lemon
salt and freshly ground pepper
1 tablespoon olive oil

Tuna is probably the best known fish. When buying tuna you should look at his flesh – it  must be colored uniformly dark red, and tight fiber without tendons. In the recipe below, I was inspired ofa recipe by Jamie Oliver .

First you need to put for a few minutes the sesame seeds (I used black and white ) in the oven to bake them. Meanwhile crush the chilli, add the crushed garlic, the chopped basil and lemon juice and season to taste. Finally, when ready, add the sesame seeds .

In this wonderful blend lay the pieces of tuna ( which should be 2 cm ). Leave the tuna in the spice mixture for about 30 minutes.

I used a ceramic pan to cook it. The pan should be very hot and with a paper towel soaked in olive oil rub it, then put the pieces of tuna in. Tuna needs a watchful eye during cooking so it remains tender and moist. Because it gets dry and chewy when overcooked, the center should still be pink when it is done cooking. You should let it for about 1 minute on each side.
