Pavlova - a light and delicious dessert!
Ingredients
250 g strawberries
125 g currants
125 g blueberries
1 tbsp cocoa
150 ml whipped cream
30 g powdered sugar
100 g crushed pistachios

2 egg whites
70 g powdered sugar
Instructions

Pavlova is a dessert created in honor of the Russian ballerina Anna Pavlova , after a tour in Australia and New Zealand. The two countries claim the invention of this meringue dessert .
Preheat the oven to 100 degrees Celsius. Prepare the base of the meringue, beating the egg whites , and adding the powdered sugar little by little. On a baking tray covered with baking sheet, form four small discs of meringue trying to obtain a small cavity in the center. Cook in the oven for one hour, then turn off the oven and leave the meringues to dry inside. When cool, the meringue should be hard on the outside, and slightly moist on the inside.
I used fruits as blueberries, strawberries and cranberries , but you can use any fruit you like.
Whip the cream with the sugar and beat until thickened.When you incorporate the sifted cocoa in the cream don’t over mix it, so it has a mottled look
Put the whipped cream on the meringue, then top with fruits. Sprinkle some crushed pistachios over them .
