A sensational cake!
For the dough:
5 egg whites
250 g sugar
100 g grounded nuts
1 Tbs bread crumbs

For the filling:
5 egg yolks
150 g sugar
3 Tbs flour
250 ml of milk
a vanilla pod
a teaspoon of vanilla extract
250g unsalted butter

It may not be the prettiest cake, but you’re sure to fall hopelessly in love with it once you taste it! The guests are sure to love it – one of my guests who tried it, immediately called it “a piece of heaven”, so you can say it’s a recipe worth trying!

Before you start the preparation of this cake, you must let the eggs outside of the fridge for at least an hour, so they can reach room temperature. This step is very important especially for the egg whites foam, so do not skip it.

In a bowl, beat the 5 egg whites with sugar. Mix them until the composition is firm and glossy. Incorporate the grounded nuts and bread crumbs with a spatula.

Grease a large oven tray with butter, cover it with baking paper and then cover the baking paper with a little butter. Pour mixture into the tray, smooth the surface and place it in a oven (preheated at 180 C) for 35-45 minutes. Baking time depends on the oven, but you must be careful not to burn the sheet because it will give it a bitter taste, but you should also make sure you cook it long enough for it to become crisp, not sticky.

For the cream:

Mix the yolks with the sugar until the composition turns white and resembles a foam. Add flour to the milk as to avoid the formation of lumps and then add it over the yolks. Boil this composition at bain-marie over low heat, stirring constantly until it becomes hard as a polenta. Turn the cream over on a plate and let it cool.

In a bowl, mix the butter and then add the cream after it has cooled completely. Clean the seeds from the vanilla bean and add it, along with the vanilla extract, while stirring the whole mixture with electric mixer until it becomes a smooth cream .
