Strawberry and prosecco ice lollies

This cake is a delicious dessert with walnuts, hazelnuts, caramel and fine chocolate that guests will love it. It is a cake that tastes like a Snicker bar
Beat the egg whites with a mixer and add the sugar one tablespoon at a time, until it’s well mixed. Add the ground walnuts mixed with flour and baking powder, folding it gently with a spoon into the batter. Spread the mixture into a tray lined with baking paper and put in preheated oven at 180 degrees for about 25 minutes.
When the dough is golden brown we remove it from the oven and leave it to cool on a rack.
For the first glaze melt the white chocolate with milk in a bowl at bain marie. When the cake is cooled, put the melted white chocolate over it and let it cool in the fridge.
For the caramel cream: place 8 tablespoons of sugar in a pot on low heat, until it’s completely melted and caramelised. Add the butter, mix it and let it boil until it’s all mixed very well.
Mix the egg yolks with the 2 tablespoons of sugar and add them to the caramel with the walnuts and hazelnuts.
Stir continuously until the cream starts to thicken. Place the cream in the fridge and when it’s completely cold, place it on the cake.
Level it nicely and put it back in the fridge, so it gets really thick.
For the second glaze melt the dark chocolate, the white one and milk together ata bain marie. Spread it over the caramel layer .
Leave in the refrigerator at least 4 hours before serving . Absolutely delicious !
