An easy and delicious quesadilla recipe!
2 tortillas
Feta cheese
Pecorino sheep cheese
1 zucchini
1 red pepper
2 large mushrooms
2 tablespoons of extra virgin olive oil
Salt & pepper

This being my first article, the one through which we “get acquainted”, I thought I should start off with something simple: an easy and delicious quesadilla recipe, with grilled vegetables, feta cheese and pesto.

We will start with the vegetables which, after they’re cut, we will splash with two tablespoons of olive oil and season them with salt and pepper. After that we will place them on the grill (or on a grill pan) for approximately 3 minutes on each side. When they’re done and they’ve had 5 minutes to cool down, we’ll cut them in small pieces.

Now we begin the assembly: on each quesadilla we’ll put 2 spoons of pesto and spread it on the whole surface. I used a bought one, but I’ll soon give you a very good recipe so you can make it at home. We sprinkle the grated mozzarella on half of each of the tortillas and we divide the grilled vegetables equally. Over the vegetables we sprinkle feta cheese and pecorino sheep cheese.

In the end we fold the tortilla in half and place it on the electric grill or on a stove grill. I like to put a little butter on the top side, but it’s not mandatory.

Serve with salsa or any other sauce you like.
